Peallach (Tobermory) 10: Ximénez-Spínola PX Finish
Peallach (’pyal-akh’) is a pseudonym name for Ledaig, the heavily peated spirit produced at Tobermory Distillery on the Isle of Mull. Established back in 1798, Tobermory Distillery is one of Scotland’s oldest, embracing the windswept wilds and maritime air of the Scottish Inner Hebrides.
This 10 year old example was matured in a single refill bourbon barrel for 9 years and then finished for 8 months in a first fill Pedro Ximénez sherry barrique, from the Ximénez-Spínola bodega in Jerez, Spain.
The artwork on this release shows a Boeing Stearman bi-plane approaching the bay of Tobermory, on the Isle of Mull. A similar aircraft resides at the Island’s only airfield, Glenforsa. Tobermory is famous for its row of colourful houses, visible in the artwork, along with the distillery at the left hand side of the bay.
